Thanks to the Internet, there is now a fantastic opportunity to explore the culture of different nations and savor the delights of their traditional cuisine. Moreover, modern technologies have made the preparation of these dishes significantly easier. Those fortunate enough to own an electric meat grinder may have found themselves puzzled by the unfamiliar attachments that come with it, and left them unused. However, these attachments can actually simplify the process of making a delicious dish called kebbe.
Features of the kebbe dish

Kebbeh, also known as kibbeh, is a beloved Middle Eastern dish that is enjoyed in various countries such as Lebanon, Israel, Palestine, Syria, Jordan, Egypt, Iran, Iraq, Turkey, and Armenia. Kebbeh cutlets are made with bulgur, which is shredded wheat harvested during the period when the wheat is milky, along with minced meat, spices, and chopped onions. In Lebanese and Syrian traditions, it was customary for a girl to showcase her kibbeh-making skills on the eve of her wedding. It’s worth mentioning that the traditional recipe calls for lamb as the main meat since pork is prohibited in the Arab culture for religious reasons. However, modern chefs have come up with numerous creative and equally delicious ways to prepare kebbeh using different types of meat, allowing for experimentation with the final product’s formation.
Using special kebbe attachments in a meat grinder

Previously, kibbeh was traditionally prepared by hand by housewives. However, with the advancement of technology, modern household appliances now allow for the preparation of kibbeh using a meat grinder. This can be done by utilizing a specific attachment designed for this purpose. The primary function of this attachment is to shape the minced meat into tubes, which can then be filled with various fillings. Some users even utilize this attachment to make sausages and homemade sausage by first outfitting the cone with a casing.
Important! It is important to note that when making hollow sausages, it is recommended to use pre-made minced meat.
Typically, these attachments come included with modern electric meat grinders. However, they can also be purchased separately from a home appliance store or through online retailers.

Once the kebbe attachment is put together, it becomes a hollow tube with thin walls. It is comprised of two parts (as shown in the picture). It’s important to note that in order to attach the nozzles, you must first remove the grate and the knife. Once that is done, the first component, in the shape of a circular piece with a long rounded convexity, is secured onto the working shaft. Then, the second component is installed, resembling a wide truncated cone. The material used for these attachments can vary depending on the cost and quality of the electric appliance, with options ranging from plastic to metal. For instance, the Zelmer Expressive line of meat grinders is considered professional-grade and includes attachments made of forged steel. When purchasing a meat grinder, it is advisable to thoroughly inspect all the included components to ensure there are no chips or rough edges that could affect proper function in the future. Keep in mind that plastic parts are generally less durable and require more careful handling, while metal components should be thoroughly dried to prevent rust formation caused by excess moisture.
Traditional kebbe recipe with the attachment
- 1kg of lean lamb;
- 1 piece of onion (medium head);
- 300g of bulgur (soaked in cold water for at least 30 minutes);
- spices (to taste).
All the ingredients should be processed in an electric meat grinder until they form a uniform mixture. The resulting minced meat should then be chilled in the refrigerator for 2 hours.

The second stuffing-starter is made up of the following ingredients:
- 500g of mutton;
- 1 medium head of onion;
- 150g of cedar nuts;
- 50g of butter;
- seasonings – as desired.
To prepare the stuffing, you need to fry minced mutton, finely chopped onions, and cedar nuts in heated vegetable oil. Then, the mixture should be combined with butter, salt, and spices according to your taste. For a unique twist, it is recommended to add a splash of pomegranate juice to the stuffing.

Afterwards, the initial ground meat mixture needs to be processed in a meat grinder using a kebbe attachment, shaping them into sausages measuring 9-11 centimeters in length and filling them with the desired stuffing. Following deep-frying, it is advised to place the kebbe on a napkin in order to remove excess oil.
Pro Tip! Kebbe can be enjoyed as a piping hot appetizer. This dish pairs nicely with vegetables and a spicy sauce.
Housewives from various countries prepare kebbeh with a variety of fillings: mushrooms, vegetables, fish, poultry, and cheese. These sausages can be deep-fried, baked in the oven, pan-fried, or stewed. However, for a truly unique experience, it is worth sticking to the authentic recipe.
